Which shape is better?
The Specialty Coffee Association (SCA) recruited expert and non-expert panelists to answer “which shape is better?”. They found a meaningful difference using flat filter basket and conical filter basket:
LIGHT ROAST
- Flat Basket: raisin, dried fruit, sweet, and floral
- Cone Basket: citrus, berry, sour
DARK ROAST
- Flat Basket: chocolate, cocoa, and woody flavors
- Cone Basket: intense bitterness
With the demonstration, the final question is “Why is there a difference?”. The flat basket and cone basket’s geometry affects the liquid flow through coffee grounds. The UC Davis Coffee Center is actively investigating this.
